General Manager (GM) – Boulettes Larder

Position Summary: Responsible for leading and managing the daily operations of the restaurant and its management team, ensuring guest satisfaction, conveying to all employees and to the public the vision of the owners, and complying with all company standards and related administrative duties to meet budget and profitability goals.

The GM reports directly to the owners.

Essential Job Functions/Responsibilities:
  • Orients and trains personnel in property and department rules, policies and procedures using company training manuals and materials. Conducts management meetings as needed for ongoing development and communication.
  • Works to instill team spirit and cooperation between all departments. Serves as a role model and sets a positive, professional example for the entire team and instills a sense of fairness, honesty and pride in the staff by leading by example.
  • Recruits, interviews, hires, trains, evaluates, rewards and disciplines personnel. Maintains accurate employee records and abides by all government regulations. Trains existing employees as needed. Utilizes formal yearly evaluation systems.
  • Utilizes formal memo posting system for timely and accurate communication of information, policy and procedure changes, and issues as they may arise. Maintains an open-door policy to address any employee issues or grievances in a responsive, fair and impartial manner.
  • Oversees timely production of all menus and beverage lists with proper pricing.
  • Samples, tastes and monitors all food and beverage products to insure food quality standards for taste, appearance, and presentation. Notifies kitchen manager and owners if there are discrepancies, inconsistencies or problems.
  • Communicates with the owners on all areas of responsibilities, including but not limited to potential problems, legal issues, employee issues, quality and cost control issues.
  • Organizes and facilitates regularly scheduled management and department meetings. Utilizes formal time management systems to delegate and complete assigned tasks on time.
  • Utilizes weekly sales and labor costs to properly staff the restaurant based on anticipated business flow.
  • Utilizes management control systems as needed to achieve budgeted sales and profit margins. Directly responsible for labor and food costs and controllable expenses.
  • Develops cost effective, ongoing marketing strategies to increase sales and profitability.
  • Coordinates with Private Events Manager to schedule private evening dinners in Boulettes Larder.
  • Completes administrative responsibilities in an accurate and timely manner. these may include staff schedules, schedule cost outs, employee documentation, new menu implementation, accounting reports and weekly inventories. Verifies invoices to track costs of goods sold, tracks credits and provides any other details requested by the bookkeeping department.
  • Ensures all inventory, property and funds are properly accounted for and secured by lock or in the safe each day. Balances cash receipts and makes bank deposits. Minimizes daily cash overages and shortages.
  • Responsible for all equipment maintenance, safety and sanitation standards. Maintenance and repair of any damaged furniture, fixtures and equipment as well as all aspects of the kitchen and bar equipment, refrigeration, HVAC, telephones, music, POS system, office equipment, interior and exterior surfaces, landscaping and lighting. Insures clean, neat and organized dining areas, kitchens, refrigerators, storerooms, outside areas and interior space under the control of the lease areas.
  • Participates in public outreach to build community affiliations.
  • Qualifications:

  • Undergraduate degree or higher from an accredited college or university.
  • Minimum of 3 years' prior restaurant management experience, with a proven background in operations and human resources. Prior experience with revenue and cost analysis and reporting is strongly preferred.
  • Ability to work 50-60 hours per week, or more as needed, including weekends.
  • Ability to operate an iPad POS system, proficiency on PCs and Macs.
  • Excellency in both written and spoken English, a working knowledge of Spanish is helpful.

LINE COOKS
We are currently looking for experienced and hardworking line cooks with familiarity with use of sustainable ingredients, knife skills and European technique. Previous fine dining restaurant experience and interest in and commitment to local and sustainable ingredients required.
All candidates should have their own professional tools and the know how to employ them.

LARDER
We are currently looking for larder retail staff.

  • Must be available for weekend shifts (both Saturday and Sunday), as well as morning weekday hours beginning at 7 or 8 am and overtime as needed. Familiarity with our business and a love for locally-sourced cuisine is a must.

  • RESPONSIBILITIES INCLUDE:
    o Food and culinary item sales including creatively packaging and preparing food & other items for take away.
    o Maintenance, design and upkeep of daily changing retail displays.
    o Acting as host on an as needed basis.
    o Maintaining a clean work area at all times.
    o Answering telephone & taking reservations.

  • SKILLS NEEDED:
    o A keen sense of how to provide excellent customer service.
    o The ability to consistently present a welcoming demeanor to our guests.
    o The ability to remain calm and friendly under adverse or stressful conditions is critical.
    o Prior food service experience, food retail experience or a degree in restaurant and hotel management is required.
    o Past experience in retail merchandising.
    o Knowledge of Micros POS is a plus; ability to learn this restaurant software is essential.
    o Ability to self-manage and to take the initiative in problem-solving.
