Born in Budapest, Hungary, Amaryll Schwertner and her family immigrated to the United States in 1956. Her maternal grandmother's talents, especially in the culinary arts, profoundly influenced her life. After university studies in neuroscience, Schwertner decided to change course. For the past 25 years, she has expressed her personal experiences, family influences, intellectual curiosity, broad knowledge, and considerable creativity through the culinary arts.
Schwertner's acute intuition is manifested through her graceful use of ingredients from all over the world and her commitment to preserving the essential nature of those ingredients. She has developed an authentic and personal culinary vocabulary as executive chef, artist, and advocate of sustainable food sources. Along with a small handful of chefs in Northern California, including Judy Rodgers, proprietor of Zuni Café, and Alice Waters, proprietor of Chez Panisse, Schwertner has nurtured the efforts of farmers who grow extraordinary quality sustainable produce and, in turn, the development of urban farmers markets.
The discipline of classic French cuisine dominated Lori Regis' early career. In 1990, she accepted a kitchen management opportunity at the seminal tapas and Iberian restaurant in San Francisco, Sol y Luna. Her work there with Executive Chef Amaryll Schwertner led to a collaboration that has flourished for 18 years.
In developing their own company, Regis was able to express and practice her natural talent for business development and financial management. Her creativity and pragmatism make her a talented entrepreneur.
Boulette's LLC was formed by chef/owners Amaryll Schwertner and Lori Regis in November 2003 expressly to design, build, and open boulettes larder, a unique retail business located adjacent to San Francisco's thriving Ferry Plaza Farmers Market in the Ferry Building Marketplace. Previously, Schwertner and Regis owned and operated Stars Restaurant in the Civic Center neighborhood and earned critical acclaim for revitalizing the restaurant originated in 1984 by Jeremiah Tower. Throughout their careers as high-profile chefs and restaurateurs, they have maintained their political and aesthetic culinary principles regarding the faithful use of ingredients that are healthful both for consumers and the environment.
Since its founding, boulettes larder has garnered widespread praise from customers and the media.
